Cucumber Slaw

 

Ingredients

2 cucumbers - quartered, seeded, and thinly sliced

2 carrots, shredded

1/4 onion, grated

2 tablespoons white sugar

1 1/2 teaspoons ground coriander

1 teaspoon kosher salt

1/2 teaspoon coarse ground black pepper

1/4 cup apple cider vinegar

\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n

Add all ingredients to list

Combine cucumbers, carrots, onion, sugar, coriander,\r\nsalt, and black pepper together in a bowl; add vinegar and mix well.

Tastes great right when you make it, but letting it\r\nsit for at least an hour will blend the flavors best. This is also a great way\r\nto use up all those cucumbers growing in your garden.
